It’s REALLY summer now, there’s so much to do and mealtime can sneak up on me, do you know what I’m talking about?

Maybe for you, it’s running kids around to camp, to the pool, to daycare all while balancing work from home…or it’s just been so hot your motivation to cook dinner is…back at the pool.. I get it.

I have a quick fix to the ‘whoops I don’t have a meal plan’ blues.

But first, let’s talk about why summer squash is so darn good for you.

3 Benefits of Summer Squash

  1. Rich in Vitamins and Minerals: Summer squash is an excellent source of vitamins A and C, which are vital for immune function, skin health, and eye health. With loads of vitamin B6, summer squash helps us metabolize protein. It’s a source of folate which produces red blood cells and reduces the risk of having a baby with certain brain or spinal cord birth defects. It also contains important minerals like magnesium, potassium, and manganese.

  2. High in Fiber: Did you know squash is filled with fiber which helps you feel full and keeps your digestive system running smoothly?Fiber is crucial for a healthy digestive system, and summer squash provides a good amount of it. Including this fiber-rich food in your diet can help regulate blood sugar levels and support weight management.

  3. Low in Calories: For those mindful of their caloric intake, summer squash is a perfect addition to meals, offering satiety and nutritional benefits without the extra calories.

And remember Oak Spring’s summer squash is Certified Organic and never sprayed with chemical pesticides, unlike conventionally grown produce. Our organic summer squash is grown in rich, well-nourished soil, free from synthetic pesticides and fertilizers so that it retains more of its natural vitamins and minerals.

    So back to my story.

The other day I grabbed some zucchini and yellow squash after work and made my commute to the house to make dinner.

I knew pan frying was in its future.

After I sauteed some diced Ferguson Family nittrate-free bacon and OSF garlic scapes I added the chopped zucchini and yellow squash and fried it to a golden brown.

Tossed with some corkscrew pasta it was a hit!

    Summer squash is so versatile.

My kids also love sliced zucchini tossed in olive oil and browned-and I mean browned-on a pancake griddle.

Sprinkle with salt and you’ve got the healthiest potato chip alternative around!

I’Il make it as a snack often. It’s so easy.
