It’s REALLY summer now, there’s so much to do and mealtime can sneak up on me, do you know what I’m talking about?

Maybe for you, it’s running kids around to camp, to the pool, to daycare all while balancing work from home…or it’s just been so hot your motivation to cook dinner is…back at the pool.. I get it.

I have a quick fix to the ‘whoops I don’t have a meal plan’ blues.

But first, let’s talk about why summer squash is so darn good for you.

3 Benefits of Summer Squash

Including this fiber-rich food in your diet can help regulate blood sugar levels and support weight management.

    So back to my story.

    The other day I grabbed some zucchini and yellow squash after work and made my commute to the house to make dinner.

    I knew pan frying was in its future.

    After I sauteed some diced Ferguson Family nittrate-free bacon and OSF garlic scapes I added the chopped zucchini and yellow squash and fried it to a golden brown.

    Tossed with some corkscrew pasta it was a hit!

    My kids also love sliced zucchini tossed in olive oil and browned-and I mean browned-on a pancake griddle.

    Sprinkle with salt and you’ve got the healthiest potato chip alternative around!
