Roasted Carrots

Yields8 Servings

 2 lbs medium carrots, peeled
  cup water
 6 large garlic cloves, whole
 1 ½ tbsp olive oil
 1 ½ tbsp unsalted butter, cut into chunks
 freshly ground pepper

Preheat the oven to 400°


Line a baking sheet with foil. On the baking sheet, combine the carrots with the water, garlic, oil and butter chunks and season with salt and pepper.


Cover with an additional sheet of foil and roast for 30 minutes, until tender. While the carrots are still hot, sprinkle with your favorite herbs or spices and serve.
