Ingredients

 1.50 lbs Oak Spring Farm plum tomatoes, diced into 1/4" cubes
 ½ Oak Spring Farm red onion, finely diced
 1 Oak Spring Farm jalapeño, finely diced (remove seeds and membrane for a milder salsa)
 ½ cup Oak Spring Farm cilantro leaves, finely chopped
 salt
 1 tbsp lime juice (one lime's worth)

Directions

After dicing all your ingredients, toss the tomatoes with 1 tsp salt and place in a colander or mesh strainer over a bowl. Let stand for 10 minutes or so. The salt will draw excess water out of the tomatoes, concentrating their flavor and color.

In a medium bowl, combine the drained tomatoes with the onion, jalapeño, cilantro, and lime juice. Toss to combine and then season to taste with salt.
