A deeply fragrant rice pilaf inspired by the warm spices of pho. Toasted basmati, homemade broth, fish sauce, and whole spices make this a simple but especially good side dish for winter meals.

Ingredients

 2 tbsp oil
 1 cup Basmati rice
 1 small onion
 3 cloves garlic, minced
 2 cups broth, any kind
 1 tsp anise seed
 1 stick cinnamon
 1 dash fish sauce
1 tbsp cooking wine to deglaze
 Salt, to taste

Directions

1

Heat 1 tablespoon of oil over medium heat in a cast iron skillet or pot. If using an Instant Pot, use the sauté setting. Add the garlic and onion and cook for 60 to 90 seconds, until fragrant.

2

Add the remaining oil and the rice. Stir to coat, then toast for 4 to 5 minutes, until the rice is translucent and very fragrant.

3

Add the whole spices and fish sauce and stir to combine.

4

Pour in the cooking wine and scrape up anything stuck to the bottom.

5

Add the broth. I usually use the finger method here rather than measuring exactly: the broth should cover the rice by about one knuckle on your pointer finger.

6

Fluff right away and serve.

7

Cook rice as you normally would. For the Instant Pot, use the rice setting. For the stovetop, bring to a boil, stir once, reduce heat to low, cover, and cook for about 20 minutes.
