Cauliflower is now the darling of the vegetable family and is one of the healthiest vegetables that can be made in a variety of ways but the latest trend is to process it in your food processor so to the cauliflower is cut down to the size of rice kernels.

Process cauliflower in your food processor (or using a box grater) so that it is cut down to the size of rice kernels.
Once you’ve got the cauliflower rice simply saute in a large skillet over medium heat with 1 T. olive oil.
Cover with a lid so that the cauliflower becomes more tender.
Cook for about 5-8 minutes, then season with salt and pepper and your favorite spices or herbs.
You can also add other vegetables such as peas and carrots, cut up red peppers or other favorite vegetables to add color. Mix in chopped fresh herbs and you've got a really delicious, no carb, high fiber alternative to rice or potatoes. For even more fun, use the purple or green cauliflower now available.
