If you’ve been part of our Cool Season CSA the past two weeks, you’ve likely already enjoyed the fresh, vibrant flavors of microgreens from Valley Mill Microgreens—a fantastic woman-owned farm we love supporting. These tiny greens pack a serious nutritional punch, and we’re thrilled to bring them to your table.
Health Benefits of Microgreens
Microgreens may be small, but they are nutritional powerhouses. Studies show that they can contain 4 to 40 times more nutrients than their mature counterparts. These little greens are loaded with:
– Vitamin C for immune support
– Vitamin K for bone health
– Beta-carotene for eye health
– Antioxidants that help reduce inflammation
They’re not just good for you; they taste amazing.
With flavors ranging from mild and nutty to spicy and bold, microgreens can elevate any meal—toss them on eggs, sandwiches, tacos, or your favorite grain bowl for an extra nutrient boost. I love adding a handful on top of my fried eggs and avocado breakfast. They are also crisp and delightful on a sandwich.
How to Keep Your Microgreens Fresh
To make the most of your microgreens, follow these simple storage tips:
1. Keep them dry – Moisture is the enemy! Store them in a container with a dry paper towel to absorb excess moisture.
2. Refrigerate them– A sealed container in the fridge keeps them crisp and fresh.
3. Rinse before eating – Give them a gentle rinse just before using to maintain their delicate texture.
Recipe: Simple & Delicious Lemon-Olive Oil Dressing
Microgreens shine in a fresh salad, and this bright, zesty dressing is the perfect complement:
– ¼ cup extra virgin olive oil
– 2 tbsp fresh lemon juice
– ½ tsp Dijon mustard
– 1 garlic clove, minced
– Salt & pepper to taste
Whisk together and drizzle over your microgreens for a simple, nourishing salad.
We love celebrating new and upcoming female farmers like Valley Mill Microgreens and can’t wait to share our own Oak Spring-grown microgreens with you soon. Enjoy the crunch, the flavor, and the nutrient boost.

Appreciate the information here, and look forward to this new year being a great one. We eat many salads but think we will have to add some Micro Greens to them. Have in the past put them on sandwiches’, but never on eggs so will try that.
Much appreciated, and we will take a country drive and visit you.
Hi Lisa,
Does the recommended storage info also work for parsley? It generally goes bad on me before I use it all.
First microgreens I ever tasted was in England on a sandwich. When I asked what it was, reply “mustard and cress”.
Cannot wait to see you in the Spring.
Hi Pat,
Yes, that can work for parsley. YOu can also keep parsley in a cup of water in the fridge!
